Instructions

  • Making the Crust:
    • Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
    • In a medium bowl, combine the crushed sugar cookies and melted butter. Mix well.
    • Press the mixture firmly and evenly into the bottom of the prepared pan to form the crust.
    • Bake for 8-10 minutes, or until lightly golden. Remove from the oven and let the crust cool completely before adding the filling.
  • Making the Cheesecake Filling:
    • In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy.
    • Add the eggs one at a time, mixing well after each addition.
    • Stir in the vanilla extract and sour cream until combined.
    • Gently fold in the jimmies sprinkles, being careful not to overmix.
  • Baking the Cheesecake:
    • Pour the cheesecake filling over the cooled crust and smooth the top.
    • Bake in the preheated oven for 50-60 minutes, or until the center is almost set but still has a slight jiggle.
    • Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour.
  • Cooling and Chilling:
    • After 1 hour, remove the cheesecake from the oven and let it cool completely to room temperature.
    • Refrigerate for at least 4 hours, or preferably overnight.
  • Serving:
    • Before serving, top the cheesecake with whipped cream and extra Christmas sprinkles.
