For the Sugar Cookie Crust:
- 2 cups crushed sugar cookies (store-bought or homemade)
- 6 tablespoons unsalted butter, melted

- 3 large eggs
- 1 teaspoon vanilla extract
- Β½ cup sour cream
- β cup Christmas-colored sprinkles (red, green, and white)

Instructions
- Making the Crust:
- Preheat oven to 325Β°F (160Β°C). Grease a 9-inch springform pan.
- In a medium bowl, combine the crushed sugar cookies and melted butter. Mix well.
- Press the mixture firmly and evenly into the bottom of the prepared pan to form the crust.
- Bake for 8-10 minutes, or until lightly golden. Remove from the oven and let the crust cool completely before adding the filling.
- Making the Cheesecake Filling:
- In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and sour cream until combined.
- Gently fold in the jimmies sprinkles, being careful not to overmix.
- Baking the Cheesecake:
- Pour the cheesecake filling over the cooled crust and smooth the top.
- Bake in the preheated oven for 50-60 minutes, or until the center is almost set but still has a slight jiggle.
- Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour.
- Cooling and Chilling:
- After 1 hour, remove the cheesecake from the oven and let it cool completely to room temperature.
- Refrigerate for at least 4 hours, or preferably overnight.
- Serving:
- Before serving, top the cheesecake with whipped cream and extra Christmas sprinkles.
