- 1 cup (225g) unsalted butter, softened
- 2 cups (400g) granulated sugar
- 3 cups (375g) all-purpose flour
- 4 large eggs
- 1 cup (240ml) milk
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Preheat oven to 175°C (350°F). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Alternately add the flour mixture and milk to the butter mixture, beginning and ending with flour. Mix until just combined.
- Stir in vanilla extract.
- Pour batter into prepared pan and smooth the top.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
Notes
- For extra flavor, add lemon zest or almond extract.
- Make sure not to overmix the batter to keep the cake tender.
- Store in an airtight container to keep moist.
