For the Turkey Meatballs:
- 1 lb ground turkey
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Salt and pepper, to taste
- 1 tablespoon olive oil (for cooking)
For the Rice Bowl:
- 2 cups cooked rice (white or brown)
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and chopped
- 1/4 cup feta cheese, crumbled
For the Tzatziki Sauce:
- 1/2 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 teaspoon dried dill
- Salt and pepper, to taste
Instructions
- Make the Meatballs:
- In a bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, garlic, oregano, cumin, salt, and pepper. Mix well.
- Form the mixture into small meatballs (about 12-14).
- Heat olive oil in a large skillet over medium heat. Cook the meatballs for 6-8 minutes, turning occasionally, until they are browned on all sides and cooked through (internal temperature should reach 165°F/74°C).
- Prepare the Tzatziki Sauce:
- In a small bowl, combine Greek yogurt, lemon juice, olive oil, dried dill, salt, and pepper. Stir until smooth and well combined. Set aside.
- Assemble the Rice Bowl:
- In a large bowl or individual serving bowls, layer the cooked rice, cucumber, cherry tomatoes, red onion, Kalamata olives, and crumbled feta cheese.
- Top with the cooked turkey meatballs.
- Serve:
- Drizzle the tzatziki sauce over the meatballs and rice.
- Serve immediately and enjoy!
Notes
- You can use ground chicken or beef instead of turkey if you prefer.
- For a more filling meal, add a handful of greens such as spinach or arugula.
- If you want extra flavor, sprinkle the meatballs with some lemon zest before serving.
