    • 1 lb ground turkey
    • 1/4 cup breadcrumbs

    • Salt and pepper, to taste
    • 1 tablespoon olive oil (for cooking)

    For the Rice Bowl:

    • 2 cups cooked rice (white or brown)
    • 1 cucumber, diced
    • 1 cup cherry tomatoes, halved
    • 1/4 red onion, thinly sliced
    • 1/4 cup Kalamata olives, pitted and chopped
    • 1/4 cup feta cheese, crumbled

    For the Tzatziki Sauce:

    • 1/2 cup plain Greek yogurt
    • 1 tablespoon lemon juice
    • 1 tablespoon olive oil
    • 1 teaspoon dried dill
    • Salt and pepper, to taste

Instructions

  1. Make the Meatballs:
    • In a bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, garlic, oregano, cumin, salt, and pepper. Mix well.
    • Form the mixture into small meatballs (about 12-14).
    • Heat olive oil in a large skillet over medium heat. Cook the meatballs for 6-8 minutes, turning occasionally, until they are browned on all sides and cooked through (internal temperature should reach 165°F/74°C).
  2. Prepare the Tzatziki Sauce:
    • In a small bowl, combine Greek yogurt, lemon juice, olive oil, dried dill, salt, and pepper. Stir until smooth and well combined. Set aside.
  3. Assemble the Rice Bowl:
    • In a large bowl or individual serving bowls, layer the cooked rice, cucumber, cherry tomatoes, red onion, Kalamata olives, and crumbled feta cheese.
    • Top with the cooked turkey meatballs.
  4. Serve:
    • Drizzle the tzatziki sauce over the meatballs and rice.
    • Serve immediately and enjoy!

  • You can use ground chicken or beef instead of turkey if you prefer.
