Description

These 2-Ingredient Sweet Potato Rolls are incredibly easy to make, soft, and fluffy! With just two simple ingredients—sweet potatoes and self-rising flour—these rolls come together quickly and bake up perfectly. Perfect for a quick, healthy, and delicious side dish at any meal!

Ingredients

Scale
  • 2 cups mashed sweet potato (about 2 medium sweet potatoes)

  • 2 cups self-rising flour

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease or line a baking sheet with parchment paper.

  2. Prepare the Sweet Potato:

    • Peel and chop the sweet potatoes into chunks. Boil or steam the sweet potatoes until tender, about 15-20 minutes.

    • Mash the sweet potatoes until smooth. Allow to cool slightly.

  3. Make the Dough:

    • In a large bowl, combine the mashed sweet potato with the self-rising flour. Stir until the mixture comes together into a dough. It will be slightly sticky, but you can add a little extra flour if needed.

  4. Shape the Rolls:

    • Turn the dough onto a lightly floured surface and gently knead it until smooth. Divide the dough into 8-10 equal pieces and shape each piece into a ball.

    • Place the rolls on the prepared baking sheet.

  5. Bake the Rolls:

    • Bake for 20-25 minutes, or until the rolls are golden brown on top.

  6. Serve:

    • Let the rolls cool for a few minutes before serving. Enjoy the soft, fluffy sweet potato rolls as a side dish or a snack!

Notes

  • For extra flavor, you can add a pinch of cinnamon or nutmeg to the dough.

  • If you don’t have self-rising flour, you can make your own by combining 2 cups all-purpose flour with 3 teaspoons of baking powder and ½ teaspoon of salt.

  • These rolls are best served fresh, but they can be stored in an airtight container for up to 2 days.
