- 1/2 cup shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional, for heat)
- Salt and black pepper, to taste
- 1 tablespoon butter
- Chopped parsley, for garnish
Instructions
- Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions. Drain and set aside, reserving about 1/2 cup of pasta water.
- While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant, being careful not to burn it.
- Pour in the heavy cream, and stir to combine with the garlic. Bring it to a simmer, then reduce the heat to low and stir in the Parmesan and mozzarella cheeses. Continue stirring until the cheese has melted and the sauce is smooth.
- Add the Italian seasoning, red pepper flakes (if using), salt, and black pepper to taste. Stir in the cooked pasta, adding a little reserved pasta water if needed to thin out the sauce.
- Return the shrimp to the skillet and toss everything together until well coated in the creamy Alfredo sauce.
- Serve immediately, garnished with chopped parsley for a fresh touch.
