  • 1 lb large shrimp, peeled and deveined
  • 8 oz fettuccine pasta (or your favorite pasta)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • Salt and black pepper, to taste
  • 1 tablespoon butter
  • Chopped parsley, for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions. Drain and set aside, reserving about 1/2 cup of pasta water.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant, being careful not to burn it.
  4. Pour in the heavy cream, and stir to combine with the garlic. Bring it to a simmer, then reduce the heat to low and stir in the Parmesan and mozzarella cheeses. Continue stirring until the cheese has melted and the sauce is smooth.
  5. Add the Italian seasoning, red pepper flakes (if using), salt, and black pepper to taste. Stir in the cooked pasta, adding a little reserved pasta water if needed to thin out the sauce.
  6. Return the shrimp to the skillet and toss everything together until well coated in the creamy Alfredo sauce.
  7. Serve immediately, garnished with chopped parsley for a fresh touch.

Notes

  • For extra flavor, you can add a splash of white wine to the sauce when simmering it.
  • If you prefer a lower-fat version, you can use half-and-half or milk in place of the heavy cream, but the sauce may not be as thick and creamy.
