Instructions

  1. Prepare the dates:
    • If your dates are not soft, soak them in warm water for about 10-15 minutes to soften, then drain them and pat dry.
    • In a food processor, blend the dates until they form a sticky dough-like consistency. If the mixture is too dry, add a tablespoon of water at a time until it becomes sticky and moldable.
  2. Form the base layer:
    • Line a small baking dish or tray (about 8×4 inches) with parchment paper.
    • Press the date mixture evenly into the bottom of the dish to form a smooth, compact layer. Use your fingers or a spoon to spread it out.
  3. Add the peanut layer:
    • Spread a layer of peanut butter on top of the date layer, smoothing it out into an even layer.
    • Sprinkle the roasted peanuts over the peanut butter layer.
  4. Prepare the chocolate coating:
    • In a small bowl, melt the dark chocolate chips and coconut oil in the microwave, stirring every 20-30 seconds until completely smooth. You can also melt the chocolate in a heatproof bowl over simmering water.
