Description

This delicious Shrimp & Cheese Grilled Sandwich features succulent shrimp sautéed with garlic and Italian seasoning, layered with melty mozzarella cheese, all nestled between crispy sourdough bread. Perfect for a quick and indulgent meal!

  • 8 oz shrimp, peeled and deveined
  • 1 cup shredded mozzarella cheese (or any melting cheese)
  • 4 slices of sourdough or thick-cut bread
  • 1 tablespoon butter (for toasting)
  • 1 tablespoon olive oil (for shrimp)
  • 1 clove garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)
  • A pinch of red pepper flakes (optional, for some heat)

Instructions

  • Prepare the Shrimp: In a skillet, heat olive oil over medium heat. Add the minced garlic and cook until fragrant (about 30 seconds). Add the shrimp, season with salt, pepper, and Italian seasoning, and sauté until pink and cooked through (about 3-4 minutes). Remove from heat and set aside.
  • Assemble the Sandwich: Spread a thin layer of butter on one side of each slice of bread. Place half of the shredded cheese on the unbuttered side of one slice. Top with the sautéed shrimp, then add the remaining cheese. Place the other slice of bread on top, buttered side facing out.
  • Grill the Sandwich: Heat a skillet or griddle over medium heat. Grill the sandwich on one side until the bread is golden and crispy, and the cheese begins to melt (about 3-4 minutes). Flip and grill the other side until both sides are golden brown and the cheese is fully melted.
  • Serve: Garnish with fresh parsley and a pinch of red pepper flakes, if desired. Serve hot and enjoy!
