- 2 lobster tails
- 2 filet mignon steaks
- 2 tbsp olive oil
- 2 tbsp butter
- Salt and pepper, to taste
- Fresh thyme, for garnish
- For Hollandaise Sauce:
- 3 egg yolks
- 1 tbsp lemon juice
- 1/2 cup unsalted butter, melted
- Salt and cayenne pepper, to taste
Instructions
- Prepare the Steak:
- Season the filet mignon steaks with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Sear steaks for 3-4 minutes on each side for medium-rare (adjust time for preferred doneness).
- Remove from the skillet and let rest for 5 minutes.
- Cook Lobster Tails:
- Preheat the oven to 425°F (220°C).
- Butterfly the lobster tails by cutting down the top shell and pulling the meat out to rest on top.
- Brush lobster meat with melted butter, and sprinkle with salt and pepper.
- Bake for 12-15 minutes, or until the meat is opaque.
- Hollandaise Sauce:
- In a heatproof bowl, whisk together egg yolks and lemon juice until thickened.
- Place the bowl over simmering water (double boiler method), whisking constantly.
- Slowly drizzle in melted butter while whisking until the sauce thickens.
- Season with salt and cayenne pepper.
- Assemble:
- Place the cooked steak on a plate, top with baked lobster tail.
- Drizzle hollandaise sauce generously over both.
- Garnish with fresh thyme and serve immediately.
