- 1 tablespoon instant coffee granules
- 1/4 cup water
- 3/4 cup caster sugar
- 1/2 teaspoon powdered gelatine
- 1 teaspoon vanilla extract
- 1 1/2 cups whipping cream
- Cocoa or chocolate shavings to serve
Instructions
- Bloom gelatine: Place the water in a saucepan over low heat and sprinkle the gelatine over the top. Stir until the gelatine is dissolved.
- Add coffee and sugar: Add the coffee granules and sugar to the saucepan. Stir until the sugar is dissolved.
- Cool coffee mixture: Transfer the coffee mixture to a large bowl and place it in the fridge for 15-20 minutes, or until cooler than room temperature.
- Whip cream: In a separate large bowl, whip the cold cream until firm peaks form.
- Combine mixtures: Stir the vanilla into the cooled coffee syrup. Add 1/4 of the whipped cream to the coffee syrup and stir to loosen. Gently fold in the remaining whipped cream, three more times.
- Chill: Divide the mixture evenly between dessert glasses and chill for at least 2 hours or overnight.
- Serve: Sprinkle with chocolate shavings or cocoa powder before serving.
