For the Lemon Loaf:

- 1 tablespoon lemon zest (about 1 lemon)
- 1/2 cup unsalted butter, softened
- 1 1/2 cups all-purpose flour

- 2 large eggs
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 cup milk (whole or 2%)
For the Lemon Glaze:
- 1 cup powdered sugar
- 2–3 tablespoons fresh lemon juice
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each addition.
- Add the lemon zest, lemon juice, and vanilla extract. Gradually mix in the dry ingredients, alternating with the milk, stirring until just combined.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- While the loaf cools, whisk together the powdered sugar and lemon juice in a small bowl until smooth and pourable. Adjust with more lemon juice if needed for desired consistency.
- Once the loaf is cool, drizzle the glaze over the top, letting it drip down the sides. Allow the glaze to set for a few minutes before slicing and serving.
