  • 1/2 teaspoon salt
  • 1 tablespoon lemon zest (about 1 lemon)
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 cup milk (whole or 2%)

For the Lemon Glaze:

  • 1 cup powdered sugar
  • 23 tablespoons fresh lemon juice

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each addition.
  • Add the lemon zest, lemon juice, and vanilla extract. Gradually mix in the dry ingredients, alternating with the milk, stirring until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  • While the loaf cools, whisk together the powdered sugar and lemon juice in a small bowl until smooth and pourable. Adjust with more lemon juice if needed for desired consistency.
  • Once the loaf is cool, drizzle the glaze over the top, letting it drip down the sides. Allow the glaze to set for a few minutes before slicing and serving.
