Ingredients
Scale
- 3 cups Rice Krispies cereal
- 1 1/2 cups chocolate chips (vegan options available)
- 1 cup chunky peanut butter
- 2 tablespoons honey (or maple syrup for a vegan version)
- 1/8 teaspoon salt
Instructions
- Prepare your muffin tin with paper or silicone liners for easy release.
- In a saucepan over low heat, combine peanut butter, honey, and salt. Stir until smooth and fluid, then remove from heat.
- Fold the Rice Krispies into the peanut butter mixture until well-coated.
- Spoon the mixture into the lined muffin tin, pressing down lightly to form the base of your cups.
- Melt the chocolate chips in a separate pan until glossy, then spoon over the peanut butter base in each cup.
- Chill the cups in the refrigerator for at least 1 hour, or until the chocolate sets.
- Once set, remove from the refrigerator, peel off the liners, and enjoy!
Notes
- For a nut-free version, use sunflower seed butter instead of peanut butter.
- Feel free to add mini marshmallows or dried fruits for extra flavor.
