- 4 red snapper fillets
- 1 lb shrimp, peeled and deveined
- 1 cup grits
- 2 cups water
- 1 cup heavy cream
- ½ cup shredded cheddar cheese
- 2 tbsp Cajun seasoning
- 4 tbsp butter
- 1 tbsp olive oil
- 2 cloves garlic, minced
- ½ cup chicken broth
- Salt and pepper to taste
Instructions
- Prepare the Grits:
- In a medium pot, bring 2 cups of water to a boil. Add the grits and cook according to package instructions, stirring occasionally.
- Once thickened, stir in ½ cup heavy cream and shredded cheddar cheese. Season with salt and pepper to taste. Keep warm.
- Cook the Red Snapper:
- Season the red snapper fillets with Cajun seasoning.
- Heat olive oil in a large skillet over medium-high heat. Sear the snapper fillets for 3-4 minutes per side, or until cooked through and golden brown. Remove from the skillet and set aside.
- Cook the Shrimp:
- In the same skillet, melt 2 tablespoons of butter. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove from the pan and set aside with the snapper.
- Prepare the Cajun Cream Sauce:
- In the same skillet, add the remaining 2 tablespoons of butter. Sauté the minced garlic until fragrant, about 1 minute.
- Pour in the remaining heavy cream and chicken broth. Cook, stirring frequently, until the sauce thickens, about 5-7 minutes. Adjust seasoning with salt and pepper to taste.
- Serve:
- Spoon the cheesy grits onto plates. Top with the red snapper and shrimp. Drizzle with Cajun cream sauce.
Notes
- For a spicier dish, increase the amount of Cajun seasoning in the sauce.
- You can adjust the thickness of the cream sauce by adding more chicken broth or cream as needed.
