Description

This dish combines succulent red snapper and shrimp with creamy, cheesy grits, all topped with a rich Cajun cream sauce. Perfect for a hearty and flavorful meal!


Ingredients

  • 4 red snapper fillets
  • 1 lb shrimp, peeled and deveined
  • 1 cup grits
  • 2 cups water
  • 1 cup heavy cream
  • ½ cup shredded cheddar cheese
  • 2 tbsp Cajun seasoning
  • 4 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • ½ cup chicken broth
  • Salt and pepper to taste

Instructions

  • Prepare the Grits:
    • In a medium pot, bring 2 cups of water to a boil. Add the grits and cook according to package instructions, stirring occasionally.
    • Once thickened, stir in ½ cup heavy cream and shredded cheddar cheese. Season with salt and pepper to taste. Keep warm.
  • Cook the Red Snapper:
    • Season the red snapper fillets with Cajun seasoning.
    • Heat olive oil in a large skillet over medium-high heat. Sear the snapper fillets for 3-4 minutes per side, or until cooked through and golden brown. Remove from the skillet and set aside.
  • Cook the Shrimp:
    • In the same skillet, melt 2 tablespoons of butter. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove from the pan and set aside with the snapper.
  • Prepare the Cajun Cream Sauce:
    • In the same skillet, add the remaining 2 tablespoons of butter. Sauté the minced garlic until fragrant, about 1 minute.
    • Pour in the remaining heavy cream and chicken broth. Cook, stirring frequently, until the sauce thickens, about 5-7 minutes. Adjust seasoning with salt and pepper to taste.
  • Serve:
    • Spoon the cheesy grits onto plates. Top with the red snapper and shrimp. Drizzle with Cajun cream sauce.

Notes

  • For a spicier dish, increase the amount of Cajun seasoning in the sauce.
  • You can adjust the thickness of the cream sauce by adding more chicken broth or cream as needed.
