- In a separate small bowl, sift together the flour, baking powder, and salt.
- Gradually incorporate the dry ingredients into the wet mixture until just combined.
- Cover the bowl and chill the dough in the refrigerator for a minimum of 60 minutes.
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a small bowl, sift together the sugar and cinnamon.

- Arrange the dough balls on the baking sheet, leaving a couple of inches between each.
