  • 1 tablespoon coconut yogurt

Instructions

  • Prepare the Pancakes:
    • Preheat a non-stick frying pan with a little coconut oil over medium heat.
    • In a mixing bowl, combine the buckwheat flour, baking powder, cinnamon, vanilla extract, maple syrup, activated charcoal, and water. Mix until a thick batter forms.

  • Make the Blackberry Compote:
    • In a small saucepan, combine the blackberries, water, and maple syrup. Simmer over medium heat until the blackberries soften and break down into a compote.
  • Assemble the Pancakes:
    • Layer the pancakes with peanut butter and coconut yogurt, then drizzle the blackberry compote on top.
