- 2 cups cooked chicken, shredded (rotisserie chicken works great)
- 1/2 cup buffalo sauce (store-bought or homemade)
- 1/4 cup ranch dressing or blue cheese dressing (depending on preference)
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded carrots (optional for crunch)
- 10–12 egg roll wrappers
- Olive oil spray or cooking spray

Prepare the Filling:
- In a large bowl, combine the shredded chicken, buffalo sauce, ranch or blue cheese dressing, and mozzarella cheese. Add the shredded carrots if using. Mix well until everything is evenly coated.

Assemble the Egg Rolls:
- Lay an egg roll wrapper on a flat surface, with a corner facing you like a diamond shape.
- Place 2-3 tablespoons of the buffalo chicken filling in the center of the wrapper.
- Fold the sides of the wrapper over the filling, then roll the egg roll tightly from the bottom to the top. Wet the top corner with a bit of water to seal it.
- Repeat with the remaining wrappers and filling.

Air Fry the Egg Rolls:
- Preheat the air fryer to 375°F (190°C) for about 3 minutes.
- Lightly spray the air fryer basket with olive oil spray to prevent sticking.
- Arrange the egg rolls in a single layer in the air fryer basket. Spray the top of the egg rolls with a light coat of olive oil spray.
- Air fry at 375°F (190°C) for 8-10 minutes, flipping halfway through, until the egg rolls are golden brown and crispy.

- Once the egg rolls are done, remove them from the air fryer and serve immediately.
- Serve with extra buffalo sauce, ranch dressing, or blue cheese dressing for dipping.
Notes
- You can use any leftover cooked chicken, such as rotisserie chicken or grilled chicken.
- If you prefer a more intense flavor, add some extra hot sauce to the filling.
- For a lower-fat version, try using a reduced-fat ranch or blue cheese dressing.
