Description

Crispy and flavorful Air Fryer Potato Skins loaded with Cheddar cheese, crumbled bacon, and optional garnishes. A perfect appetizer or snack for gatherings!


Ingredients

  • 8 small russet potatoes, scrubbed
  • 2 tablespoons Roasted Garlic Infused Oil, divided
  • 1ยฝ teaspoons Garlic Pepper Seasoning, divided
  • 2 cups shredded mild Cheddar cheese
  • ยฝ pound bacon slices, cooked and crumbled (about 1 cup)
  • Sliced green onions and sour cream, optional for garnish

Instructions

  • Prepare Potatoes: Pierce each scrubbed potato with a fork in several spots. Rub or brush the potatoes with 1 tablespoon of Roasted Garlic Infused Oil and sprinkle with 1 teaspoon of Garlic Pepper Seasoning.
  • Air Fry Potatoes: Place the potatoes in the air fryer basket or on the lowest rack in the air fryer. Set the air fryer to 400ยฐF (no need to preheat). Air fry for 40 minutes or until the potatoes are fork-tender. Remove from the fryer and let cool.
  • Scoop and Season: Once cooled, cut the potatoes in half and scoop out the flesh, reserving it for another use (like mashed potatoes). Brush the insides of the potato halves with the remaining 1 tablespoon of Roasted Garlic Infused Oil and sprinkle with the remaining ยฝ teaspoon of Garlic Pepper Seasoning.
  • Crisp the Skins: Place the potato shells, skin-side down, back in the air fryer basket or on the rack. Set the air fryer to 400ยฐF and air fry for 3-4 minutes until the insides are nicely browned.
  • Add Toppings: Remove the potato skins and top them with shredded Cheddar cheese and crumbled bacon. Continue air frying for another 2-3 minutes until the cheese is melted and bubbly.
  • Garnish and Serve: Garnish with sliced green onions and sour cream, if desired. Serve warm.

Notes

Make Ahead & Freeze: Prepare through step 2 and place the potato shells in a gallon freezer bag. Seal well, label, and freeze. When ready to use, continue with step 3, adding 1-2 minutes to the air frying time.
