Description

These Almond Joy Air Fryer Cookies are a delightful, chewy treat that combines the flavors of chocolate, coconut, and almonds in a quick and easy air fryer recipe. With the perfect balance of sweetness and crunch, they make for a satisfying dessert or snack in no time!


Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup semi-sweet chocolate chips
  • 12 whole almonds

Instructions

  1. Preheat the air fryer to 350°F (175°C) for about 5 minutes.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter with the brown sugar and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add the egg and vanilla extract to the butter mixture, and beat until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Stir in the shredded coconut and chocolate chips.
  6. Using a tablespoon or cookie scoop, scoop out the cookie dough and roll it into balls. Place the cookie dough balls on a piece of parchment paper or directly into the air fryer basket, making sure they’re spaced about 1 inch apart.
  7. Press one almond into the center of each cookie dough ball.
  8. Air fry the cookies at 350°F (175°C) for 6-8 minutes, or until the edges are golden brown and the centers are set. Depending on your air fryer model, you may need to check the cookies after 6 minutes and adjust the time if necessary.
  9. Remove the cookies from the air fryer and allow them to cool on a wire rack. Enjoy!

Notes

  • If you prefer, you can also use milk chocolate chips or dark chocolate chips for a different flavor profile.
  • For a chewier cookie, you can chill the dough for about 30 minutes before air frying, but it’s not necessary.
