Description

These Almond Joy Cookies are a quick and easy treat, bringing together the classic flavors of coconut, chocolate, and almonds. With only a few ingredients and minimal prep time, they’re perfect for a sweet snack or dessert. Inspired by the beloved candy bar, these cookies are chewy, rich, and absolutely delicious!

Ingredients

Scale
  • 1 (14-ounce) bag of sweetened shredded coconut
  • 1 (12-ounce) bag of chocolate chips
  • 1 (14-ounce) can of sweetened condensed milk
  • 2/3 cup chopped almonds

Instructions

  • Preheat the oven to 325°F (163°C).
  • In a large mixing bowl, combine the shredded coconut, chocolate chips, sweetened condensed milk, and chopped almonds. Mix well until fully combined.
  • Using a cookie scoop, firmly pack the dough into the scoop and place each portion onto a parchment-lined baking sheet, spacing about 1 inch apart.
  • Bake for 12-14 minutes, or until the edges are golden brown.
  • Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

  • Press the cookie dough firmly into the scoop to help the cookies hold their shape while baking.
  • For a richer flavor, try using dark chocolate chips.
