Description

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 1/4 cups fresh or frozen blueberries (if frozen, do not thaw)
  • 1 tablespoon flour (for tossing blueberries)
  • For Almond Praline Topping:
  • 1/2 cup sliced almonds
  • 1/3 cup brown sugar
  • 3 tablespoons unsalted butter
  • 1 tablespoon honey or maple syrup

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch round or square cake pan.
  2. Cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each. Mix in vanilla and almond extract.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Alternately add flour mixture and milk to the creamed mixture, beginning and ending with flour. Mix until just combined.
  5. Toss blueberries with 1 tablespoon flour and gently fold into the batter.
  6. Pour batter into the prepared pan and smooth the top.
  7. In a small saucepan, combine brown sugar, butter, honey, and sliced almonds. Cook over medium heat until butter melts and mixture bubbles. Remove from heat and pour evenly over cake batter.
  8. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean and the top is golden and bubbling.
  9. Cool in the pan for 15 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes

  • To prevent blueberries from sinking, ensure they are well-coated in flour.
  • For a crunchier praline, add a few extra almonds to the topping mixture.
  • This cake is delicious served with a dollop of whipped cream or vanilla ice cream.
