  • 2 medium baking apples, peeled and chopped
  • ½ cup light brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 large egg (room temperature)
  • ⅓ cup white granulated sugar
  • ¼ cup vegetable oil
  • ¼ cup full-fat sour cream (room temperature)
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt

For the Glaze:

  • 1 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 3 tablespoons milk (whole milk preferred, or substitute with cream or non-dairy milk)

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Prepare an 8×4 or 9×5 inch loaf pan with nonstick spray or cake release.
  • Apple Mixture: In a medium bowl, mix the chopped apples, brown sugar, cinnamon, and ginger. Set aside.
  • Wet Ingredients: In a large mixing bowl, whisk together the egg, granulated sugar, vegetable oil, sour cream, and vanilla extract until smooth and well combined.
  • Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring until almost completely combined.
  • Add Apples: Fold in ¾ of the apple mixture, then pour the batter into the prepared loaf pan. Top with the remaining apple mixture.
  • Bake: Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean. Let the bread cool in the pan for at least 30 minutes before transferring to a wire rack to cool completely.
  • Prepare Glaze: In a small bowl, whisk together the powdered sugar, vanilla extract, and milk until smooth. If it’s too thin, add a little more powdered sugar.
  • Glaze the Bread: Drizzle the glaze generously over the cooled apple fritter bread right before serving.
