- Pot Roast:
- 3โ4 lbs beef chuck roast
- 2 tbsp vegetable oil
- 1 large onion, sliced
- 3 cloves garlic, minced
- 4 carrots, peeled and cut into chunks
- 3 celery stalks, chopped
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- Salt and pepper to taste
- Mashed Potatoes:
- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 4 tbsp butter
- Salt and pepper to taste
- Green Beans:
- 1 lb fresh green beans, trimmed
- 2 tbsp butter
- 2 cloves garlic, minced
- Salt and pepper to taste
- Dinner Rolls:
- 2 1/4 tsp active dry yeast
- 1 cup warm water
- 3 cups all-purpose flour
- 1/4 cup sugar
- 1/4 cup butter, melted
- 1 tsp salt
- 1 egg
- Shoofly Pie (for dessert):
- 1 1/2 cups all-purpose flour
- 1/2 cup molasses
- 1/2 cup brown sugar
- 1/2 cup boiling water
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- Butter for topping
Instructions
- Preheat oven to 325ยฐF (165ยฐC).
- Heat oil in a large pot over medium-high heat. Season beef roast with salt and pepper, then sear on all sides until browned. Remove and set aside.
- In the same pot, sautรฉ onions, garlic, carrots, and celery until softened.
- Return the roast to the pot, add beef broth, red wine (if using), thyme, and rosemary. Cover and cook in oven for 3-4 hours until meat is tender.
- Meanwhile, boil potatoes until fork-tender. Drain and mash with butter and milk. Season with salt and pepper.
- Steam or blanch green beans until crisp-tender. Sautรฉ garlic in butter, then toss beans in garlic butter. Season to taste.
- For dinner rolls, dissolve yeast in warm water with a pinch of sugar. Let stand 5 minutes. Mix flour, sugar, salt, melted butter, and egg. Knead dough, let rise until doubled. Shape rolls and bake at 375ยฐF (190ยฐC) for 15-20 minutes.
- For shoofly pie, dissolve baking soda in boiling water. Mix molasses, brown sugar, flour, cinnamon, and salt. Pour into pie crust, dot with butter, and bake at 350ยฐF (175ยฐC) for 35-40 minutes until set.
- Serve pot roast sliced with mashed potatoes, green beans, and rolls, finishing with a slice of shoofly pie for dessert.
