Description

A comforting, hearty casserole filled with ground beef, vegetables, and creamy potatoes, topped with melted cheese. This Amish-inspired dish is perfect for family dinners and easy meal prep.


Ingredients

  • 1 lb ground beef

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)

  • 4 large potatoes, peeled and diced

  • 1 can (10.5 oz) cream of mushroom soup

  • ½ cup sour cream

  • 1 cup shredded cheddar cheese

  • ½ tsp dried thyme

  • Salt and pepper to taste

  • 1 tbsp olive oil (for sautéing)

  • 1 tbsp fresh parsley, chopped (optional, for garnish)


Instructions

  1. Cook the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook until tender, about 10-12 minutes. Drain and set aside.

  2. Cook the Ground Beef: In a large skillet, heat olive oil over medium heat. Add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onion is soft, about 7-8 minutes. Drain any excess fat.

  3. Add Vegetables and Seasoning: Stir in the frozen mixed vegetables, cream of mushroom soup, sour cream, dried thyme, salt, and pepper into the beef mixture. Cook for another 5-7 minutes until heated through and well combined.

  4. Combine with Potatoes: Gently fold in the cooked potatoes into the beef and vegetable mixture, ensuring everything is evenly combined.

  5. Assemble the Casserole: Preheat your oven to 350°F (175°C). Transfer the mixture into a greased 9×13-inch baking dish. Top with shredded cheddar cheese.

  6. Bake: Bake for 20-25 minutes, or until the cheese is melted and bubbly. If you’d like a golden top, broil for 2-3 minutes at the end.

  7. Serve: Let the casserole rest for 5 minutes before serving. Garnish with chopped parsley, if desired.

Notes

  • You can use any frozen vegetable mix you prefer or substitute with fresh vegetables.

  • To make this dish even heartier, add crumbled cooked bacon on top before baking.

 

  • This casserole can be made ahead and stored in the fridge for up to 3 days. Reheat in the oven at 350°F until warm.
