Ingredients
Scale
- 1 lb ground beef
- 1 onion, chopped
- 4 medium potatoes, peeled and sliced
- 1 (10.5 oz) can cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- 1 tablespoon olive oil (for cooking beef)
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Add chopped onion and cook until softened, about 5 minutes.
- Add ground beef to the skillet and cook until browned, breaking it up into small pieces as it cooks. Drain excess fat if necessary.
- In a large mixing bowl, combine the cooked ground beef, cream of mushroom soup, sour cream, and shredded cheddar cheese. Season with salt and pepper to taste.
- In a greased baking dish, layer the sliced potatoes evenly on the bottom.
- Spread the beef mixture over the potatoes.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake for another 15-20 minutes, or until potatoes are tender and casserole is bubbly.
- Let cool for a few minutes before serving.
Notes
- If you prefer, you can use frozen hash browns instead of fresh potatoes.
- Feel free to swap out the ground beef for ground turkey or chicken for a lighter version.
