For the crust:

Instructions
- Preheat the oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
- In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan to form the crust. Bake for 8-10 minutes, then set aside to cool.
- In a large bowl, beat the softened cream cheese and sugar until smooth. Add the eggs and vanilla extract, mixing until combined. Pour the cheesecake batter over the cooled crust.
- In a small bowl, toss the diced apples with lemon juice, brown sugar, cinnamon, and nutmeg. Spread the apple mixture evenly over the cheesecake layer.
- For the crumble, combine the flour, oats, brown sugar, and cinnamon in a bowl. Cut in the cold butter using a fork or pastry cutter until the mixture resembles coarse crumbs. Sprinkle the crumble evenly over the apples.
- Bake for 35-40 minutes, or until the cheesecake is set and the crumble is golden brown.
- Allow the bars to cool completely, then refrigerate for at least 2 hours before slicing into squares.
