For the cake:

  • 1 1/2 cups apple cider
  • 2 cups all-purpose flour
  • 1 tsp baking powder

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk

For the cinnamon-sugar topping:

  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 tbsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch bundt pan or tube pan.
  2. In a small saucepan, bring the apple cider to a simmer over medium heat. Cook for about 10-12 minutes, or until the cider has reduced to about 1/2 cup. Set aside to cool.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In a large mixing bowl, beat together the softened butter and sugar until light and fluffy, about 3-4 minutes.
  5. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  6. Add the dry ingredients to the wet ingredients in three parts, alternating with the reduced apple cider and milk. Start and end with the dry ingredients. Mix until just combined.
  7. Pour the batter into the prepared bundt pan and smooth the top.
  8. Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then remove from the pan and let it cool completely on a wire rack.
  10. Once cooled, brush the top of the cake with the melted butter, then sprinkle with the cinnamon-sugar mixture.
  11. Slice and enjoy this moist, flavorful apple cider donut cake!
