For the cake:
- 1 1/2 cups apple cider
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2 tsp ground cinnamon

- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk

- 1/4 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 tbsp ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch bundt pan or tube pan.
- In a small saucepan, bring the apple cider to a simmer over medium heat. Cook for about 10-12 minutes, or until the cider has reduced to about 1/2 cup. Set aside to cool.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large mixing bowl, beat together the softened butter and sugar until light and fluffy, about 3-4 minutes.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Add the dry ingredients to the wet ingredients in three parts, alternating with the reduced apple cider and milk. Start and end with the dry ingredients. Mix until just combined.
- Pour the batter into the prepared bundt pan and smooth the top.
- Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then remove from the pan and let it cool completely on a wire rack.
- Once cooled, brush the top of the cake with the melted butter, then sprinkle with the cinnamon-sugar mixture.
