Description

Ingredients

  • 1 tbsp baking powder

  • 6 tbsp cold unsalted butter, cubed
  • 1/2 cup raisins
  • 1 cup peeled and finely diced apple (about 1 medium apple)
  • 2/3 cup heavy cream, plus extra for brushing
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  3. Cut the cold butter into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.
  4. Stir in the raisins and diced apples until evenly distributed.
  5. In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.
  6. Pour the wet ingredients into the dry ingredients and mix just until combined. Do not overmix.
  7. Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together.
  8. Pat the dough into a 1-inch thick circle and cut into 8 wedges.
  9. Place the scones on the prepared baking sheet. Brush the tops with extra cream for a golden finish.
  10. Bake for 16-18 minutes, or until the scones are golden brown and cooked through.
  11. Let cool slightly before serving warm or at room temperature.
