- 2 tablespoons heavy cream (or milk)
Instructions
- Prepare the Cupcakes:
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, cream the butter and sugar together until light and fluffy (about 3 minutes).
- Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

- Prepare the Apple Pie Filling:

- Fill each cupcake with a spoonful of the cooled apple pie filling.
- Prepare the Cinnamon Frosting:
- In a large mixing bowl, beat the butter until smooth and creamy.
- Gradually add the powdered sugar, one cup at a time, mixing well after each addition.
- Add the vanilla extract and ground cinnamon, then gradually add the heavy cream. Beat on high until the frosting is fluffy and spreadable.
