Description

This refreshing Apple Salad combines the crisp sweetness of Honeycrisp apples with crunchy celery, juicy grapes, toasted pecans, and tangy dried cranberries. Tossed in a light dressing, it’s the perfect side dish for any meal or a healthy snack on its own!

Ingredients

Scale
  • 2 large Honeycrisp apples, cored and chopped
  • 2 celery stalks, thinly sliced
  • 1 cup seedless red grapes, halved
  • ½ cup pecans, toasted
  • ¼ cup dried cranberries
  • 2 tbsp lemon juice (to prevent apples from browning)
  • ¼ cup Greek yogurt or mayonnaise (optional for dressing)
  • 1 tbsp honey (optional for sweetness)
  • Salt and pepper to taste

Instructions

  1. Prepare the produce: Core and chop the Honeycrisp apples into bite-sized pieces. Slice the celery and halve the grapes. Set aside.
  2. Toast the pecans: Preheat your oven to 350°F. Place pecans on a baking sheet and toast them for 5-7 minutes, stirring halfway through to prevent burning.
  3. Mix the ingredients: In a large mixing bowl, combine the chopped apples, celery, grapes, toasted pecans, and dried cranberries.
  4. Optional dressing: In a small bowl, whisk together Greek yogurt (or mayonnaise), honey, and lemon juice. Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly. Season with salt and pepper to taste.
  5. Chill and serve: Let the salad sit in the fridge for at least 30 minutes to allow the flavors to meld. Serve chilled and enjoy!

Notes

  • Adding the lemon juice helps keep the apples from browning.
  • For a vegan option, substitute Greek yogurt with a plant-based yogurt.
