- For the dressing:
- 2 tbsp fresh lemon juice
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 1/4 cup extra virgin olive oil

Instructions
- In a small bowl, whisk together lemon juice, Dijon mustard, honey, salt, and pepper.
- Slowly drizzle in olive oil while whisking until dressing is emulsified.
- In a large salad bowl, combine spinach, sliced apples, red onion, and nuts.
- Drizzle the dressing over the salad and toss gently to coat.
- Sprinkle with cheese if using, and serve immediately.
Notes
- Use any crunchy apple variety you prefer.
- For a vegan version, omit cheese or use a plant-based alternative.
