Ingredients
Scale
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 2 large eggs
- 1 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts or raisins (optional, for texture)
- Powdered sugar (for dusting, optional)
Instructions
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or a loaf pan.
- Mix Dry Ingredients:
- In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
- Cream the Butter and Sugar:
- In a large mixing bowl, cream together the softened butter and brown sugar using an electric mixer until light and fluffy, about 3 minutes.
- Add the Eggs:
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
- Combine with Applesauce:
- Stir in the applesauce and vanilla extract until well mixed.
- Add Dry Ingredients:
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Fold in Optional Mix-ins:
- If desired, fold in chopped walnuts or raisins for extra texture and flavor.
- Bake:
- Pour the batter into the prepared pan and smooth the top with a spatula. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve:
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. If desired, dust with powdered sugar before serving.
