Ingredients
Scale
- 1 can (14 oz) artichoke hearts, drained and chopped
- 1/2 cup all-purpose flour
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- 2 tablespoons fresh parsley, chopped
- 1/4 cup milk
- Vegetable oil for frying
- For the whipped goat cheese: 4 oz goat cheese, softened
- 2 tablespoons heavy cream
- 1 teaspoon lemon juice
- 1 tablespoon honey (optional, for a touch of sweetness)
Instructions
- Prepare the whipped goat cheese: In a medium bowl, whisk together the goat cheese, heavy cream, lemon juice, and honey (if using) until smooth and creamy. Set aside.
- Prepare the fritter mixture: In a large bowl, combine the chopped artichokes, flour, breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, pepper, egg, parsley, and milk. Mix well until all ingredients are incorporated and a thick batter forms.
- Heat the oil: In a large skillet, heat about 2 inches of vegetable oil over medium heat. Test the oil by dropping a small spoonful of batter into the oil—it should sizzle and rise to the surface.
- Fry the fritters: Using a spoon, drop spoonfuls of the artichoke batter into the hot oil. Fry for 2-3 minutes on each side, or until golden brown and crispy. Be careful not to overcrowd the pan—fry in batches if needed.
- Drain and serve: Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil. Let them cool slightly.
- Serve: Arrange the fritters on a serving platter and top with a dollop of the whipped goat cheese. Serve warm and enjoy!
Notes
- For a lighter version, you can bake the fritters at 375°F (190°C) for 15-20 minutes, flipping halfway through until golden and crispy.
- If you don’t have fresh parsley, dried parsley or basil can be substituted for a different flavor.
- The fritters can be made ahead and stored in the refrigerator. Reheat in the oven to maintain crispiness before serving.
- For extra flavor, sprinkle a little lemon zest on top of the whipped goat cheese before serving.
