  • For the whipped goat cheese: 4 oz goat cheese, softened
  • 2 tablespoons heavy cream
  • 1 teaspoon lemon juice
  • 1 tablespoon honey (optional, for a touch of sweetness)

Instructions

  1. Prepare the whipped goat cheese: In a medium bowl, whisk together the goat cheese, heavy cream, lemon juice, and honey (if using) until smooth and creamy. Set aside.
  2. Prepare the fritter mixture: In a large bowl, combine the chopped artichokes, flour, breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, pepper, egg, parsley, and milk. Mix well until all ingredients are incorporated and a thick batter forms.
  3. Heat the oil: In a large skillet, heat about 2 inches of vegetable oil over medium heat. Test the oil by dropping a small spoonful of batter into the oil—it should sizzle and rise to the surface.
  4. Fry the fritters: Using a spoon, drop spoonfuls of the artichoke batter into the hot oil. Fry for 2-3 minutes on each side, or until golden brown and crispy. Be careful not to overcrowd the pan—fry in batches if needed.
  5. Drain and serve: Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil. Let them cool slightly.

Notes
