Peanut Dressing:
- 1/3 cup creamy peanut butter
- 1/4 cup honey
- 1/4 cup toasted sesame oil
- 2 tablespoons apple cider vinegar
- 1–2 teaspoons ground ginger
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 clove garlic (optional)
- Cayenne pepper or sriracha (optional)
Salad:
- 2 cups cooked chicken
- 1 head of romaine lettuce, shredded
- 2 cups cooked edamame
- 1 cup red cabbage, shredded
- 1 red bell pepper, diced
- 1 medium cucumber, diced
- 1 large carrot, shredded
- 1/4 cup sliced almonds or peanuts
- 2 green onions, thinly sliced
- 3–4 tablespoons fresh cilantro, minced
- 2–3 tablespoons fresh basil leaves, sliced
Instructions
- Make the dressing: In a medium bowl, whisk together all the dressing ingredients until smooth. Adjust seasonings to taste.
- Prepare the salad: In a large bowl, combine the cooked chicken, lettuce, edamame, red cabbage, bell pepper, cucumber, carrot, almonds, green onions, cilantro, and basil.
- Toss and serve: Pour half of the dressing over the salad and toss to coat. Top with the remaining dressing before serving.

- For extra crunch, add more nuts or seeds.
