Peanut Dressing:

  • 1/3 cup creamy peanut butter
  • 1/4 cup honey
  • 1/4 cup toasted sesame oil
  • 2 tablespoons apple cider vinegar
  • 12 teaspoons ground ginger
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 clove garlic (optional)
  • Cayenne pepper or sriracha (optional)

Salad:

  • 2 cups cooked chicken
  • 1 head of romaine lettuce, shredded
  • 2 cups cooked edamame
  • 1 cup red cabbage, shredded
  • 1 red bell pepper, diced
  • 1 medium cucumber, diced
  • 1 large carrot, shredded
  • 1/4 cup sliced almonds or peanuts
  • 2 green onions, thinly sliced
  • 34 tablespoons fresh cilantro, minced
  • 23 tablespoons fresh basil leaves, sliced

Instructions

  • Make the dressing: In a medium bowl, whisk together all the dressing ingredients until smooth. Adjust seasonings to taste.
  • Prepare the salad: In a large bowl, combine the cooked chicken, lettuce, edamame, red cabbage, bell pepper, cucumber, carrot, almonds, green onions, cilantro, and basil.
  • Toss and serve: Pour half of the dressing over the salad and toss to coat. Top with the remaining dressing before serving.
