Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a baking dish.
- Prepare the chicken: Using a sharp knife, create a pocket in each chicken breast by cutting horizontally through the middle without cutting all the way through. Be sure to leave the edges intact to form a pouch for the stuffing.

- Stuff the chicken: Gently stuff each chicken breast with the cheese mixture, then add 3-4 asparagus spears into the pocket, depending on the size of your chicken breasts. Secure the chicken with toothpicks if needed to hold the stuffing in place.
- Sear the chicken: Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear for 2-3 minutes on each side, until golden brown.
- Bake the chicken: Transfer the skillet (or chicken to a baking dish) to the preheated oven and bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) and the chicken is cooked through.
