  • 1 tablespoon fresh parsley, chopped (for garnish, optional)

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a baking dish.
  2. Prepare the chicken: Using a sharp knife, create a pocket in each chicken breast by cutting horizontally through the middle without cutting all the way through. Be sure to leave the edges intact to form a pouch for the stuffing.
  3. Make the stuffing: In a small bowl, combine the cream cheese, shredded mozzarella, Dijon mustard (if using), garlic powder, onion powder, thyme, salt, and pepper. Mix until smooth and well combined.
  4. Stuff the chicken: Gently stuff each chicken breast with the cheese mixture, then add 3-4 asparagus spears into the pocket, depending on the size of your chicken breasts. Secure the chicken with toothpicks if needed to hold the stuffing in place.
  5. Sear the chicken: Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear for 2-3 minutes on each side, until golden brown.
