Description

These Australian Busters are rich, cheesy biscuits with a hint of cayenne pepper. Perfect as a side to soups or stews, they offer a delightful crunch and a burst of flavor.


Ingredients

  • 8 tablespoons butter, cut into 1/4-inch dice
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 3 1/2 cups shredded sharp cheddar cheese, loosely packed
  • 6 to 7 tablespoons water
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Preheat oven to 450°F (230°C). Line a large baking sheet with parchment paper and set aside.
  2. In a medium bowl, combine flour and salt. Add diced butter and rub into the flour using your fingertips until the mixture resembles coarse crumbs.
  3. Mix in the shredded cheddar cheese.
  4. Gradually add 6 tablespoons of water and cayenne pepper, stirring with a fork until the dough comes together. If the dough is too dry, add the remaining water, a little at a time.
  5. Turn the dough onto a lightly floured surface and roll it out to a 1/4-inch thickness.
  6. Using a 3-inch round cutter, cut out biscuits and place them on the prepared baking sheet. Re-roll scraps as needed.
  7. Prick each biscuit 10 times with the tines of a fork.
  8. Bake for 15 minutes, or until golden brown.
  9. Remove from oven and let sit on the baking sheet for 5 minutes before transferring to a wire rack to cool.

  • For a spicier kick, increase the amount of cayenne pepper.
