Ingredients
Scale
- 1 delicata squash, sliced into 1/4-inch rounds and seeds removed
- 1/4 cup grated parmesan cheese (for squash croutons)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 4 cups kale, chopped and massaged
- 1/4 cup shaved parmesan cheese
- 2 tablespoons toasted pine nuts
- Caesar dressing (your favorite, to taste)
Instructions
- Prepare the Squash Croutons:
Preheat the oven to 400°F. Toss the delicata squash slices with olive oil, grated parmesan, salt, and pepper. Spread the squash on a baking sheet in a single layer and roast for 20-25 minutes, flipping halfway, until golden and crispy. - Prepare the Salad:
In a large bowl, massage the kale by gently squeezing and releasing the leaves until they soften and darken. Add the shaved parmesan and toasted pine nuts to the kale. - Assemble the Salad:
Once the squash croutons are done, let them cool slightly. Add them to the salad, then drizzle with Caesar dressing and toss to combine. - Serve:
Enjoy immediately or chill for a bit to let the flavors meld. Perfect as a hearty side dish or main course!
