Description

These Avocado Tacos are fresh, creamy, and packed with flavor! A perfect vegetarian taco option, loaded with avocado, crunchy veggies, and a zesty sauce.

Ingredients

Scale

For the Tacos:

  • 2 ripe avocados, sliced
  • 8 small soft corn or flour tortillas
  • 1 cup shredded lettuce (romaine or iceberg)
  • 1 medium tomato, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup crumbled feta cheese or cotija cheese (optional)
  • 1 lime, cut into wedges

For the Sauce:

  • 1/2 cup sour cream or Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 teaspoon hot sauce (optional, for extra heat)

Instructions

  1. Prepare the Sauce:
    • In a small bowl, combine the sour cream or Greek yogurt, lime juice, chili powder, garlic powder, salt, and pepper. Stir until smooth and well combined. If you like it spicier, add a teaspoon of hot sauce and mix it in.
  2. Warm the Tortillas:
    • Heat the tortillas in a dry skillet over medium heat for about 30 seconds per side until warm and slightly toasted, or wrap them in a damp paper towel and microwave for 30 seconds.
  3. Assemble the Tacos:
    • Lay the warm tortillas flat and spread a little of the prepared sauce on each tortilla.
    • Add a few slices of avocado to each taco, followed by shredded lettuce, diced tomato, red onion, and cilantro. Sprinkle with crumbled feta or cotija cheese (if using).
  4. Serve:
    • Squeeze a wedge of lime over the tacos for extra freshness and zest.
    • Serve immediately, and enjoy these light, flavorful avocado tacos!

Notes

  • Vegan Option: For a vegan version, use dairy-free yogurt or omit the cheese.
  • Add Protein: If you’d like to add protein, grilled chicken, black beans, or even crispy tofu would make a great addition.
  • Extra Toppings: Feel free to add extra toppings like pickled jalapeños, roasted corn, or avocado salsa for even more flavor.
