Instructions
- Toast the slices of bread until golden brown and crispy.
- While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork until smooth. Season with salt, pepper, and a squeeze of fresh lemon juice (optional).
- Heat olive oil (or butter) in a skillet over medium heat. Crack the eggs into the skillet and cook to your desired doneness (fried sunny-side-up, over-easy, or over-medium). Season with salt and pepper.
- Once the toast is ready, spread a generous layer of mashed avocado on each slice of bread.
- Top each slice of avocado toast with a fried egg.
