Instructions

  1. Toast the slices of bread until golden brown and crispy.
  2. While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork until smooth. Season with salt, pepper, and a squeeze of fresh lemon juice (optional).
  3. Heat olive oil (or butter) in a skillet over medium heat. Crack the eggs into the skillet and cook to your desired doneness (fried sunny-side-up, over-easy, or over-medium). Season with salt and pepper.
  4. Once the toast is ready, spread a generous layer of mashed avocado on each slice of bread.
