For the Brownie Layer:

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

For the Baileys Cheesecake Layer:

 

  • 8 oz (1 package) cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/4 cup Baileys Irish Cream
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour

Instructions

  1. For the Brownie Layer:

    1. Preheat the Oven:
      Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper for easy removal.

    2. Make the Brownie Batter:
      In a medium bowl, whisk together the melted butter and granulated sugar until smooth. Add the eggs and vanilla extract, and mix until combined.
      Sift together the flour, cocoa powder, salt, and baking powder, then fold into the wet ingredients until just combined. The batter should be thick.

    3. Bake the Brownies:
      Pour the brownie batter into the prepared baking pan and spread it out evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Remove from the oven and let it cool while you prepare the cheesecake layer.

    For the Baileys Cheesecake Layer:

    1. Make the Cheesecake Batter:
      In a medium bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the egg, Baileys Irish Cream, and vanilla extract, and beat until fully combined. Finally, add the flour and mix until smooth.

    2. Layer the Cheesecake on the Brownies:
      Pour the cheesecake batter over the cooled brownie layer. Use a spatula to smooth the top, and make sure it covers the brownies evenly.

    3. Bake the Brownies Again:
      Bake the combined layers for another 25-30 minutes, or until the cheesecake layer is set and lightly golden on top. A toothpick inserted into the center should come out clean.

    4. Cool and Chill:
      Let the brownies cool in the pan for about 10 minutes, then transfer them to the fridge and chill for at least 2 hours to allow the cheesecake layer to fully set.

    5. Serve:
      Once chilled, cut into squares and serve. Optionally, drizzle with more Baileys or top with whipped cream for an extra indulgent touch.

Notes

  • For extra decadence, drizzle melted chocolate or Baileys over the top of the brownies before serving.
  • These brownies can be stored in the fridge for up to 4 days. Make sure they are covered tightly to maintain freshness.

 

  • You can adjust the amount of Baileys in the cheesecake layer to your taste, but be sure to not add too much or it may affect the texture of the cheesecake.
