- 1 cup apple cider
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/3 cup light brown sugar
- 1/4 cup granulated sugar
- 1/2 cup unsweetened applesauce
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
For the Cinnamon Maple Glaze:
- 1 cup powdered sugar
- 2 tablespoons pure maple syrup
- 1/4 teaspoon ground cinnamon
- 1–2 tablespoons milk (adjust for consistency)
Instructions
- Preheat the oven to 350°F (175°C) and grease a doughnut pan.
- In a small saucepan, simmer the apple cider over medium heat until reduced to about 1/2 cup. Set aside to cool slightly.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In a separate large bowl, whisk the brown sugar, granulated sugar, applesauce, oil, egg, vanilla, and reduced apple cider until smooth.
- Add the dry ingredients to the wet ingredients and stir until just combined.
- Spoon or pipe the batter into the prepared doughnut pan, filling each cavity about 3/4 full.
- Bake for 10–12 minutes or until the doughnuts spring back when lightly touched. Let them cool in the pan for 5 minutes, then transfer to a wire rack.
- For the glaze, whisk together the powdered sugar, maple syrup, cinnamon, and 1 tablespoon of milk. Add more milk as needed for a smooth, dippable consistency.
- Dip the tops of the cooled doughnuts into the glaze, allow excess to drip off, and place back on the rack to set.
Notes
- For extra flavor, roll warm doughnuts in cinnamon sugar before glazing.
- Use fresh-pressed apple cider for the richest apple flavor.
- These doughnuts are best eaten the same day, but can be stored in an airtight container for up to 2 days.
