- 1 teaspoon lemon juice

Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a skillet over medium heat, melt coconut oil or butter. Add diced apples, brown sugar (or maple syrup), cinnamon, nutmeg, and lemon juice. Cook for 5–7 minutes until apples are soft and syrupy. Stir in cornstarch if using and cook for another minute. Let the mixture cool slightly.
- Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10–15 seconds or until pliable but not too soft. Lay it on a clean surface.
- Spoon 2–3 tablespoons of the apple filling onto the bottom third of the wrapper. Fold the sides inward and then roll it up tightly like a spring roll.
- Place the roll seam-side down on the prepared baking sheet. Repeat with remaining wrappers and filling.
- Lightly brush or spray the rolls with oil to help them crisp up in the oven.
- Bake for 20–25 minutes, flipping once halfway, until the rolls are golden and crisp on both sides.
- Let cool slightly before serving. Enjoy as-is or serve with a dusting of powdered sugar or a dipping sauce like caramel or vanilla yogurt.
