Ingredients

- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- Optional: powdered sugar for dusting
Instructions
- Preheat oven to 375°F (190°C). Grease a mini muffin tin or line with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, whisk milk, egg, melted butter, and vanilla extract until combined.
- Pour wet ingredients into dry ingredients and gently mix until just combined. Do not overmix.
- Fold in the fresh blueberries carefully.
- Fill mini muffin cups about 3/4 full with batter.
- Bake for 15-18 minutes or until golden and a toothpick inserted comes out clean.
- Allow to cool slightly before removing from the tin.
- Optional: dust with powdered sugar before serving.
Notes
- Use fresh or frozen blueberries (if frozen, do not thaw to avoid bleeding color).
- Can substitute milk with almond or oat milk for a dairy-free option.
- For extra flavor, add a pinch of cinnamon or lemon zest to the batter.
- Store leftovers in an airtight container at room temperature for up to 2 days.
