Description

Delicious bite-sized baked fritters bursting with fresh blueberries, lightly sweetened and perfect for a snack or breakfast treat.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 375°F (190°C). Grease a mini muffin tin or line with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk milk, egg, melted butter, and vanilla extract until combined.
  4. Pour wet ingredients into dry ingredients and gently mix until just combined. Do not overmix.
  5. Fold in the fresh blueberries carefully.
  6. Fill mini muffin cups about 3/4 full with batter.
  7. Bake for 15-18 minutes or until golden and a toothpick inserted comes out clean.
  8. Allow to cool slightly before removing from the tin.
  9. Optional: dust with powdered sugar before serving.

Notes

  • Use fresh or frozen blueberries (if frozen, do not thaw to avoid bleeding color).
  • Can substitute milk with almond or oat milk for a dairy-free option.
  • For extra flavor, add a pinch of cinnamon or lemon zest to the batter.
  • Store leftovers in an airtight container at room temperature for up to 2 days.
