Ingredients
- 4 medium potatoes (Yukon Gold or Russet)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried rosemary (or thyme)
- 1/4 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- Fresh parsley, chopped (for garnish, optional)
- Optional: 1/4 cup grated cheese (cheddar, parmesan, or your choice) for a cheesy twist
Instructions
-
Preheat the Oven: Preheat your oven to 425°F (220°C).
-
Prepare the Potatoes: Wash and peel the potatoes (if desired) and cut them into bite-sized cubes (about 1-inch in size).
-
Season the Potatoes: In a large bowl, toss the potato cubes with olive oil, garlic powder, paprika, onion powder, rosemary, salt, and black pepper until evenly coated.
-
Bake: Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper. Make sure they’re not overcrowded for even cooking.
-
Roast the Potatoes: Bake for 25-30 minutes, flipping the potatoes halfway through to ensure they cook evenly. Bake until they are golden brown and crispy on the outside and tender on the inside.
-
Optional – Add Cheese: If you like cheesy potatoes, sprinkle grated cheese over the potatoes during the last 5 minutes of baking and return to the oven until melted and bubbly.
-
Serve: Remove from the oven, garnish with fresh chopped parsley if desired, and serve immediately with your favorite breakfast dishes.
Notes
- Variation: For extra flavor, sprinkle some chili powder or red pepper flakes for a bit of heat.
- Make-Ahead: These potatoes can be prepped ahead of time by cutting and seasoning them the night before. Store in the fridge and bake the next morning.
- Air Fryer: If you have an air fryer, you can also cook the potatoes in batches at 400°F for 20-25 minutes for an even crispier texture.
