Ingredients
Scale
- For the Casserole:
- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) enchilada sauce
- 8 flour tortillas, cut into quarters
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream (optional for topping)
- For Garnish (optional):
- Chopped green onions
- Chopped cilantro
- Sliced jalapeños
- Sour cream or guacamole
Instructions
- Prepare the Beef: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat. Stir in the taco seasoning and water, then cook for an additional 5 minutes, allowing the flavors to meld. Stir in the black beans and enchilada sauce, then remove from heat.
- Assemble the Casserole: Preheat the oven to 375°F (190°C). Spray a 9×13-inch baking dish with cooking spray. Layer the bottom of the dish with a few pieces of the cut flour tortillas, covering the entire surface.
- Top the tortillas with a portion of the beef and bean mixture, then sprinkle with a generous amount of shredded cheddar cheese. Repeat the layers, ending with a layer of cheese on top.
- Bake the Casserole: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
- Serve: Remove from the oven and let it cool for a few minutes. Top with a dollop of sour cream and garnish with green onions, cilantro, jalapeños, or any other desired toppings. Serve and enjoy!
Notes
- For a spicier version, add diced green chilies or jalapeños to the beef mixture.
- You can swap the ground beef for ground turkey or chicken for a leaner option.
- Feel free to customize the layers with additional ingredients like corn, bell peppers, or olives.
- This casserole can be prepared in advance and stored in the fridge for up to 2 days before baking. It also freezes well for up to 3 months.
