- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup feta cheese, crumbled
- 1/4 cup panko breadcrumbs
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh oregano, chopped
- 2 tablespoons olive oil (for vinaigrette)
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper to taste (for vinaigrette)
Instructions
- Preheat your oven to 400°F (200°C). Grease a baking dish with 1 tablespoon of olive oil.
- Season the chicken breasts with salt and pepper, then place them in the prepared baking dish.
- In a small bowl, combine the crumbled feta, panko breadcrumbs, parsley, and oregano. Sprinkle the mixture evenly over the top of the chicken breasts.
- Bake the chicken for 25–30 minutes, or until the chicken is cooked through and the feta topping is golden and crispy.
- While the chicken bakes, prepare the vinaigrette. In a small bowl, whisk together 2 tablespoons of olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper until smooth.
- Once the chicken is done, remove from the oven and drizzle the vinaigrette over the chicken before serving.
- Serve the chicken with your choice of side dish and enjoy!
Notes
- If you prefer, you can use goat cheese or ricotta for a different flavor profile.
- For added crunch, sprinkle some extra panko on top of the chicken halfway through baking.
