Description

Baked Chicken with Crispy Feta & Vinaigrette is a savory and tangy dish that combines tender baked chicken with a crispy feta topping, all drizzled with a zesty vinaigrette. It’s a perfect balance of flavors and textures, ideal for a quick and delicious dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup panko breadcrumbs
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped
  • 2 tablespoons olive oil (for vinaigrette)
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste (for vinaigrette)

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a baking dish with 1 tablespoon of olive oil.
  2. Season the chicken breasts with salt and pepper, then place them in the prepared baking dish.
  3. In a small bowl, combine the crumbled feta, panko breadcrumbs, parsley, and oregano. Sprinkle the mixture evenly over the top of the chicken breasts.
  4. Bake the chicken for 25–30 minutes, or until the chicken is cooked through and the feta topping is golden and crispy.
  5. While the chicken bakes, prepare the vinaigrette. In a small bowl, whisk together 2 tablespoons of olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper until smooth.
  6. Once the chicken is done, remove from the oven and drizzle the vinaigrette over the chicken before serving.
  7. Serve the chicken with your choice of side dish and enjoy!

Notes

  • If you prefer, you can use goat cheese or ricotta for a different flavor profile.
  • For added crunch, sprinkle some extra panko on top of the chicken halfway through baking.
  • This dish pairs well with roasted vegetables, rice, or a fresh salad.
