Description

Tender baked chicken breasts layered with sautéed spinach and mushrooms, baked to perfection with a creamy sauce—an easy and healthy dinner option.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 tsp dried thyme (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add garlic and sauté for 1 minute.
  3. Add mushrooms and cook until soft, about 5 minutes.
  4. Add chopped spinach and cook until wilted, about 2 minutes. Remove from heat.
  5. Stir in cream cheese until melted and combined. Season with salt, pepper, and thyme.
  6. Place chicken breasts in a greased baking dish. Season with salt and pepper.
  7. Spread the spinach and mushroom mixture evenly over each chicken breast.
  8. Sprinkle mozzarella and Parmesan cheeses on top.
  9. Bake uncovered for 25–30 minutes, or until chicken is cooked through and cheese is golden.
  10. Let rest for 5 minutes before serving.

  • Can substitute cream cheese with Greek yogurt for a lighter version.
