- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 1/2 cup shredded mozzarella cheese
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- 1/2 tsp dried thyme (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add garlic and sauté for 1 minute.
- Add mushrooms and cook until soft, about 5 minutes.
- Add chopped spinach and cook until wilted, about 2 minutes. Remove from heat.
- Stir in cream cheese until melted and combined. Season with salt, pepper, and thyme.
- Place chicken breasts in a greased baking dish. Season with salt and pepper.
- Spread the spinach and mushroom mixture evenly over each chicken breast.
- Sprinkle mozzarella and Parmesan cheeses on top.
- Bake uncovered for 25–30 minutes, or until chicken is cooked through and cheese is golden.
- Let rest for 5 minutes before serving.

- Use fresh spinach for best flavor and texture.
- Can substitute cream cheese with Greek yogurt for a lighter version.
- Serve with rice, pasta, or a side salad.
