Description

Baked Cod with Lemon and Garlic is a healthy, flavorful dish featuring tender cod fillets infused with the bright flavors of lemon and aromatic garlic. This quick and easy meal is perfect for any night of the week.


Ingredients

  • 4 cod fillets (about 6 oz each)
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 lemon, zested and juiced
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
  • Salt and pepper, to taste
  • Lemon slices, for garnish
  • Extra parsley, for garnish

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking dish or sheet with parchment paper or lightly grease it.
  • In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, parsley, salt, and pepper.
  • Pat the cod fillets dry with paper towels. Place them in the prepared baking dish and brush with the lemon garlic mixture. Arrange lemon slices on top.
  • Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
  • Garnish with extra parsley and lemon slices before serving.
