- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 lime, juiced
- 1 bell pepper, sliced (optional, for serving)
- 1 onion, sliced (optional, for serving)
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, combine chili powder, cumin, garlic powder, paprika, onion powder, salt, and pepper.
- Rub the chicken breasts with olive oil, then sprinkle both sides with the fajita seasoning mix.
- Place the seasoned chicken breasts on a baking sheet lined with parchment paper or a lightly greased baking dish.
- Squeeze fresh lime juice over the chicken.
- Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Optional: During the last 5 minutes of baking, add sliced bell peppers and onions to the baking sheet to roast alongside the chicken.
- Remove the chicken from the oven and let it rest for 5 minutes before slicing and serving.
