Description

This Baked French Onion Gnocchi is a delicious, heartier take on the classic French onion soup! Soft gnocchi is baked in a savory caramelized onion broth, topped with gooey melted cheese, and served with crispy French bread for dipping. It’s the ultimate comfort food, perfect for cozy nights in!

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 large sweet onion, thinly sliced
  • 1 tablespoon fresh minced thyme
  • 2 cups beef broth
  • 1 lb gnocchi (store-bought or homemade)
  • Salt and pepper to taste
  • 1 cup shredded Swiss or Gruyère cheese
  • 810 slices French bread, toasted

Instructions

  • Preheat the oven: Preheat your oven to 400°F (200°C).
  • Caramelize the onions: In a large skillet or Dutch oven, melt the olive oil and butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are deeply caramelized (about 20 minutes).
  • Add flavor: Stir in the thyme and pour in the beef broth. Bring the mixture to a gentle simmer.
  • Cook the gnocchi: Add the gnocchi to the skillet and cook, stirring occasionally, until the gnocchi is tender and the broth has thickened (about 5-10 minutes). Season with salt and pepper.
  • Assemble and bake: Transfer the gnocchi and broth mixture to a greased baking dish. Top with shredded cheese and bake for 20-25 minutes, or until the cheese is melted and golden brown.
  • Serve: Serve the dish hot with toasted French bread slices for dipping. Enjoy!

Notes

  • If you prefer a vegetarian version, you can swap out the beef broth for vegetable broth.
  • For extra richness, you can mix in a bit of Parmesan cheese along with the Gruyère or Swiss.
  • The dish is best enjoyed immediately after baking while the cheese is still melted and bubbly.
