- 2 medium yellow squash or golden potatoes, thinly sliced
- 1 cup tomato sauce
- 1 cup shredded mozzarella or provolone cheese
- ¼ cup grated Parmesan cheese
- Fresh sage or basil leaves
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Salt and pepper, to taste
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare Tomato Sauce: Spread a thin layer of tomato sauce on the bottom of a baking dish.
- Assemble Layers: Layer the squash slices upright, alternating with cheese slices, in the baking dish. Insert fresh sage or basil leaves between the slices for extra flavor.
- Season and Drizzle: Drizzle olive oil over the layered squash, and sprinkle with garlic, salt, and pepper.
- Bake: Cover the dish with foil and bake for 30-35 minutes, or until the squash is tender.
- Add Cheese Topping: Remove the foil, sprinkle Parmesan cheese over the top, and bake for an additional 10-15 minutes until the cheese is melted and golden.
- Serve: Garnish with extra sage or basil leaves and serve warm.
