- 1 lb ground beef (80/20 blend)
- 1/2 lb ground pork
- 1 cup cooked macaroni and cheese (cooled)
- 1/2 cup breadcrumbs
- 1 large egg
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1/2 cup shredded cheddar cheese (optional, for extra filling)
- 1/2 cup BBQ sauce (for drizzling)
- Fresh parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- In a large bowl, combine ground beef, ground pork, breadcrumbs, egg, Parmesan, garlic, onion powder, Italian seasoning, salt, and pepper. Mix until just combined—do not overwork.
- Scoop about 2 tablespoons of the meat mixture and flatten into a disc in your hand.
- Place 1 tablespoon of mac and cheese (and a pinch of cheddar if using) in the center, then fold the meat around it to seal and form a ball. Repeat with remaining mixture.
- Place meatballs on the prepared baking sheet. Bake for 20–25 minutes, or until cooked through and golden brown.
- Remove from oven and brush or drizzle each meatball with BBQ sauce.
- Return to oven for 5 more minutes to caramelize the sauce.
- Garnish with fresh parsley and serve hot.
Notes
- Chill mac and cheese before stuffing to make shaping easier.
- You can make the meatballs ahead and refrigerate until ready to bake.
